General Nutrition Guidelines for Newly Diagnosed Celiac Patients
- Obtain the following labs: CBC, vitamin B12, RBC, folate, ferritin
- If you have diarrhea or PSC/PVC, obtain vitamin A level, prothrombin time, 25-hydroxy vitamin D level
- Baseline bone density study (DEXA scan)
